Quick & Easy Holiday Potato Salad
Ingredients:
6 baby russet potatoes
½ tsp salt
2 celery sticks, diced
½ white onion, diced
4 green onions (optional)
4 dill pickles, diced
Fresh parsley, chopped
6 hard-boiled eggs, diced
1 cup mayonnaise
1 cup sour cream
2 tbsp Dijon mustard
1 tsp diced capers (optional)
Black pepper to taste
Instructions:
Wash and cut potatoes into bite-size pieces.
Boil with water and salt until fork-tender. Drain and let cool.
Dice celery, white onion, green onions (optional), dill pickles, parsley, and hard-boiled eggs.
In a bowl, mix onion, mayonnaise, and sour cream.
Add celery, pickles, and green onions; stir gently.
Add potatoes and mix well.
Add Dijon mustard and stir.
Fold in diced eggs and parsley.
Add optional capers and black pepper.
